Shrimp and Guacamole Appetizer

Roger Blakely of Plano, Texas submitted this delicious recipe for a shrimp and guacamole appetizer. We are pleased to announce him the winner of Florida Greek Guy’s Appetizer Recipe Contest. Try it out and you’ll see why!

Ingredients

12 uncooked medium shrimp, peeled and deveined
Florida Greek Guy Blackened Fish Seasoning
1 medium avocado
1 Tablespoon chopped sweet onion
1 Tablespoon chopped tomato
1 Tablespoon lime juice
1 Tablespoon fresh cilantro chopped
2 teaspoons Florida Greek Guy OPA! Seasoning
12 tortilla chip scoops

Directions

Shrimp
First, using medium sauce pot place 2 inches of water in pot, add shrimp to steamer, insert steamer in pot and sprinkle Florida Greek Guy Blackened Fish over shrimp and stir to coat. Then, steam 3 to 5 minutes or until shrimp turns orange and still firm (do not overcook or let get mushy). Finally, remove shrimp from heat.

Guacamole
To get started, in medium size bowl mash avocado with fork. Then, stir in onion, tomato, lime juice, fresh cilantro, and Florida Greek Guy OPA! Seasoning.

Finish up by placing 12 tortilla scoops on serving plate, add a teaspoon guacamole and 2 pieces of shrimp. Fair warning, 12 may not be enough!
