Thanksgiving dinner is complete with Florida Greek Guy’s roasted turkey and stuffing recipe made with our Poultry and Taste of Florida seasonings! It’s so good, you’ll want to make it anytime – not just the holidays!
1 10-12 lb turkey (feeds 10)
Preheat oven to 325 degrees. To prep bird, wash inside and outside of turkey and pat dry with paper towels. Then, cut fresh lemons and generously juice and rub inside and outside of turkey. Finally, rub the outside of turkey with Florida Greek Guy Poultry Seasoning.
Before stuffing turkey (see recipe below) generously sprinkle Florida Greek Guy Taste of Florida in cavity of turkey.
Stuff turkey and bake at 325 degrees until the internal temperature reaches 165 degrees.
Greek Turkey Stuffing
1/4 cup extra virgin olive oil
1 lb. lean ground pork sausage
2 large onions, diced
2 stalks of celery including leaves, chopped
4 cloves of garlic, minced
1 packet of turkey giblets, finely chopped
3 Tbsp. chopped fresh parsley
1 tsp. dry oregano
2 Tbsp. chopped fresh sage
1 bay leaf
1/2 cup of sweet red dessert wine
2 cups vegetable stock
2 loaves fresh bread
1/2 cup of raisins
1 1/2 cup of chestnuts, chopped
1/2 cup of pine nuts
10 black olives
Salt and pepper to taste
In a deep pot heat olive oil with a medium heat and fry sausage, onions, celery, garlic, and giblets for 5 minutes stirring continuously. Then, add parsley, oregano, and sage and sir for an 5 additional minutes. Add bay leaf, wine, Florida Greek Guy Poultry seasoning, and vegetable stock. Cover and cook for 15 minutes. While the mixture is cooking break bread into tiny pieces and after 15 minutes, add to pot. Mix well, cover, turn off heat and let sit for 15 minutes. Mix in eggs, chestnuts, pine nuts, raisins and olives. Stuff turkey. Place turkey in the oven, and pour a glass of wine. You earned it!
