BBQ Pork with Rice Greek Style

We call this recipe BBQ Pork Greek Style but it’s not really a barbecue. Traditionally this dish is called Kontosouvli and is made as a dish at Easter with fatty meats, usually grilled over coals.

Popular now at restaurants and taverns throughout Greece, this is a recipe with a twist.  Bake it in the oven, wrap in parchment paper which retains the moisture and blends the flavors of all the ingredients perfectly. This is a nice way to enjoy pork!  Enjoy!


Ingredients for Pork Skewers

2-3 pounds pork tenderloin

Florida Greek Guy All Purpose Seasoning to taste or use Florida Greek Guy Meat Blend to taste

3 cloves garlic, sliced thin

1 onion, halved

1 red bell pepper, quartered with seeds and stems removed

1 green bell pepper, quartered with seeds and stems removed

1 lemon, halved

1 tablespoon dry Greek oregano

1/4 cup extra virgin olive oil

1/4 cup white wine vinegar

2 sprigs rosemary

Ingredients for Rice

1 cup rice (Florida Greek Guy prefers brown)

2 bay leaves

3 whole clove

2 cups water

Florida Greek Guy All Purpose Seasoning to taste

2 tablespoons extra virgin Olive Oil

2 sprigs rosemary

3 lemon rinds

Instructions for Pork

First, cut meat into large pieces (about 2 inches) and place in a large mixing bowl. Then generously apply Florida Greek Guy All Purpose Seasoning and add garlic and halved onion. Next, add bell peppers. Then add juice of the one lemon, add halved lemons after juiced, oregano, olive oil and white wine vinegar. Lastly, add rosemary sprigs. Mix ingredients by hand, cover bowl with plastic wrap and refrigerate 12 hours.

After marinating, preheat oven to 350 degrees. Remove marinated pork from refrigerator and place skewers on flat roasting pan. Take two or three skewers (depending on skewer size) and start skewering first with half lemon, meat, bell peppers and finally, onion. Repeat process until skewer is full. Lay skewers on roasting pan and pour remaining marinade over skewers. Cover with parchment paper then aluminum foil. Bake for 2 hours. Uncover after 2 hours and roast another 30 minutes. Finally, place finished skewers on bed of prepared rice.

Instructions for Rice

Preheat oven to 350 degrees. Then, in a baking pan, add rice, bay leaves, cloves, water, Florida Greek Guy All Purpose Seasoning, olive oil, rosemary and lemon rind. Next, cover with foil and bake 30 minutes. When done remove bay leaves and cloves. Place in serving dish and place skewers on top. Serve with fresh rosemary, oregano and olive oil drizzled on top.
